Sweet Potato Chips with Greek Yogurt Ginger Dip

1 sweet potato peeled
Sea salt & ground pepper to taste
1/2 cup low-fat Greek yogurt
2 tsp honey
1/2 tsp ginger, grated

Preheat oven to 400 degrees F
Use a mandolin or vegetable slicer to cut potatoes
in very thin slices. Sprinkle with salt & pepper and bake for 5 to 7 minutes.

In a bowl whisk together yogurt, honey & ginger.
Serve with chips.
